This Bison Sweet Potato Skillet is seriously delicious and so easy to make! It only requires one pan and takes under 30 mins!
Ground bison is a great substitute for ground beef, it is a lean meat that is high in B vitamins, iron, and zinc.
This recipe is perfect for prepping meals for the week and is designed to be split into 4-5 servings (depending on your personal serving size).

Bison Sweet Potato Skillet
1 pound lean ground bison
1 tbsp. olive oil
1 cup red onion, diced
2 red bell peppers
3 cloves of garlic, grated (or powder equivalent)
2 large sweet potatoes, diced (approximately 4-5 cups)
1 (14.5) cans diced tomatoes, undrained
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1 teaspoon sea salt
1/2 cup water
Heat the olive oil in a large skillet over medium-high heat.
Add onion and garlic, cook till fragrant.
Add in the bison and salt. Cook until the bison has browned.
Add the remaining ingredients (minus the avocado) and cover with the lid.
Cook on medium heat for 20 mins or until the sweet potatoes are fork tender.
Top with diced avocado and more red onion, if desired.
If meal prepping, divide the pan into 4-5 equal servings and add to Tupperware.
