Sweet Potato & Guacamole Appetizer Bites

Last weekend was the Desire Fitness client Christmas party. Throwing a yearly Christmas party is my favourite way to show client appreciation and to celebrate the fitness achievements that my clients made that year.


This year I hosted a games night and with that came the need to have some tasty but still healthy appetizers for everyone to enjoy (even those with food allergies/intolerances).

The sweet potato guacamole bites are vegan, dairy free, sugar free, and gluten free. But most importantly, they are a delicious crowd pleaser and did not last long!

While preparing the bits you can double up the sweet potato amount to save some time with your own meal prep for the upcoming week. The cumin and paprika give some really nice flavour to the sweet potato and is perfect paired with roasted veggies and a protein source. For my roasted veggies recipe visit this blog post.

Sweet Potato & Guacamole Bites

Recipe makes approx. 30 bites

Prep time: 10 mins

Cook time: 40 mins

Total time: 50 mins

Ingredients:

Sweet potato base:

1.5 lbs organic sweet potato (1-2 inches in diameter)

1 tbsp. extra virgin olive oil

1 tsp. cumin

1 tsp. paprika

salt to taste

Guacamole:

2 organic avocados

4 tbsp. fresh lime juice

1 jalapeno (finely diced)

2 cloves garlic

5-6 tbsp. red onion (finely diced)

pinch sea salt

Directions:

Preheat the oven to 400 degrees F.

Wash and dry the sweet potatoes. Cut the sweet potato slices about 1/2 inch thick and add to a large bowl.

Cover the sweet potato with olive oil. Add the cumin, paprika, and salt. Mix to get an even coat of spice on all the sweet potato.

Place the sweet potato on a large crisper baking sheet (shown in photo and link below) and bake for 40 mins.

Or use a cookie pan lined with tin foil. Bake for 20 mins, flip, and the bake for another 20 mins or until crispy.

While the sweet potato is cooking add all the guacamole ingredients to a bowl and mash with a fork.

Once the sweet potato is baked and cooled, top with the guacamole.

If you are preparing this ahead of time, keep the guacamole refrigerated till you plan to serve (to prevent the avocado from browning).
