Gluten Free Cinnamon Bun Muffins

If you love Cinnamon Buns you will love this simple and easy muffin recipe. These Cinnamon Bun Muffins are gluten free, dairy free, and seriously delicious!


You can also make the recipe vegan by swapping out the egg for a flax egg (1tbsp. ground flax and 3tbsps. water). Make sure to let the flax/water mix sit for a few mins to allow the flax to absorb the water.

These Cinnamon Bun Muffins do not require any rolling that a traditional cinnamon bun does. Simply add the dough to a muffin tin and then top with the cinnamon mix.


Let the muffins cool fully on a cooking rack before adding the glaze. If you are trying to reduce your sugar intake skip the glaze. The muffins are still super tasty without it!

Gluten Free Cinnamon Bun Muffins

*Recipe makes 12 muffins


Batter:

  • 1 1/2 cups gluten free flour

  • 1/4 tsp. salt

  • 2 tsp. baking powder

  • 1/4 cup cane OR coconut sugar

  • 1/2 cup almond OR coconut milk (unsweetened)

  • 1 egg OR a flaxseed "egg" (1 tbsp. ground flax & 3 tbsp. water) for a vegan alternative

  • 1 tsp. vanilla

  • 1/3 cup coconut oil (melted)


Cinnamon mix:

  • 1/3 cup coconut oil

  • 1/4 cup brown sugar

  • 2 tsp. cinnamon


Glaze: (skip this if you wish to reduce your sugar intake)

  • 1 cup icing sugar

  • 2 tbsp. almond OR coconut milk


Directions:

  1. Preheat the oven to 350°F and add muffin liners to your muffin tray.

  2. In a large bowl, mix the flour, salt, baking powder, and sugar.

  3. In a small bowl mix the almond milk, egg, vanilla, and melted coconut oil.

  4. Slowly pour the wet mix to the dry mix and stir until combined.

  5. Fill each muffin tin 3/4 full with the batter.

  6. Next add the melted coconut oil, brown sugar, and cinnamon in a small bowl.

  7. In a circular motion drizzle the cinnamon mix over each uncooked muffin and swirl.

  8. Bake on the middle rack for 20-22 minutes or until the muffins come out dry with a toothpick.

  9. Once cooked let the muffins cool completely before adding the optional glaze.

  10. While the muffins are cooling combine the icing sugar and almond milk in another small bowl to make the glaze.

  11. Drizzle the glaze over each muffin.

  12. Enjoy!
