Roasted veggies are a great way to help make meal prep simple and easy. Eating your vegetables roasted can also aid in digestion.
To make the sheet pan veggies you will need parchment paper and a large baking sheet.
Roasted Sheet Pan Veggies
Prep Time: 10mins
Cook Time: 20-25mins
3 large carrots
1 large broccoli crown
1 red bell pepper
1 yellow pepper
1 red onion
2 tbsp. extra virgin olive oil
2 tbsp. rosemary
1 tbsp. thyme
Pink Himalayan salt (to taste)
Cut up all the veggies. In a large bowl coat the veggies with olive oil and then toss in spices. Line your baking sheet with parchment paper, add veggies, and bake for 20-25 mins or until desired doneness.
For meal prepping purposes divide into 4-5 equal servings.
You can add your roasted veggies to a protein/carb for future meals or enjoy as a snack.
