Greek Watermelon Salad

Beat the heat with this super easy, super tasty Greek Watermelon Salad!




A few weeks ago I got to try out My Greek Plate, the local Greek restaurant in Cochrane. As a summer feature they have a watermelon salad on the menu. The idea of putting watermelon in a salad had never crossed my mind before and I just had to try it! I ordered it without the feta (to keep it dairy free) and the salad was incredible, so refreshing and light, a perfect meal for a hot summer day.


With the forecast in Calgary and Edmonton calling for temperatures 30+ all week, I figured it was the perfect time to recreate that Greek watermelon salad at home. As per my dietary restrictions I made the salad dairy free and gluten free. This recipe can easily be made in bulk for your meal prep, simply add the dressing before eating to prevent the salad from getting soggy.




If your body agrees with dairy, feel free to add some feta cheese to the salad. I went with grilled chicken as my protein but you could do this salad with fish or with your favourite plant based protein if you're vegan or vegetarian.
